Aromatic grape chutney 

Simple recipe in the Thermomix

Preserving grapes

Grape chutney is not only a great flavor enhancer, but also a great way to preserve excess grapes. The mixture of red wine, balsamic vinegar and herbs ensures that the flavors combine perfectly and the chutney has a long shelf life. An additional plus point: you can adapt it to your taste and, for example, add a little chili to make it spicier.

Can you use the grapes with the seeds?

Yes, that works in principle. However, I would suggest that the grapes are first chopped in the Thermomix on level 10 for around 5-10 minutes. This way, the grape seeds are barely noticeable. The seeds of red grapes are noticeably harder than those of white grapes. So you could shorten the time for white grapes.

INGREDIENTS

  • 800 grams of grapes, seeded
  • 3 red onions
  • 2 cloves of garlic
  • 100 ml balsamic vinegar
  • 50 ml red wine, dry
  • 5 sprigs of thyme
  • 1 sprig of rosemary
  • ¼ teaspoon salt
  • 1 tablespoon mustard
  • 1 pinch of pepper
  • 300 g 2:1 gelling sugar
  • 1 teaspoon coarsely ground chili, if you prefer the spicy note

PREPARATION

  1. If you are processing grapes with seeds, then chop the grapes in the Thermomix for 5 to 10 minutes on level 10. However, it is better to halve the grapes and remove the seeds first.
  2. Put the onions and garlic in the Thermomix and chop for 10 seconds on level 5. Push down with the spatula.
  3. Add sugar and caramelize for 2 minutes at 100 degrees, level 1.
  4. Wash the herbs, pat dry and pick off the leaves or needles.
  5. Add the wine, vinegar, herbs, mustard and grapes and mix for 10 seconds at level 3.
  6. Then reduce for 15 minutes at 100 degrees, level 1.
  7. Season with salt and pepper.
  8. Pour the chutney into jars while it is still hot and seal.
TIP

If you fancy a little more spice, add a chopped chilli pepper!
