INGREDIENTS

  • 15 – 20 fresh sage leaves
  • 3 tbsp rice flour
  • 1 egg
  • Salt to taste
  • Vegetable oil for deep frying

PREPARATION

  1. Wash the sage leaves carefully and pat dry thoroughly.
  2. In a small bowl, beat the egg with a fork until fluffy, then add the rice flour and a pinch of salt. Mix everything well until a smooth dough forms.
  3. Dip the sage leaves one at a time into the batter so that they are completely covered.
  4. Heat plenty of vegetable oil in a pan. Fry the sage leaves over medium heat until golden and crispy. Caution: Only fry the leaves briefly to prevent them from becoming bitter.
  5. Drain on kitchen paper and sprinkle with a little salt if desired.
  6. Serve the crispy sage leaves warm or cold – ideal as a snack or as a topping for salads, pasta or meat dishes.
TIP

Sage can be enjoyed wonderfully in combination with other Mediterranean herbs such as rosemary and lavender.
