INGREDIENTS

  • 1 spring onion
  • 2 garlic cloves
  • 1 tsp vegetable broth paste (for 0.5 l of broth, homemade or store-bought)
  • 500 g cooked scarlet runner beans (Käferbohnen)
  • 70 g Styrian pumpkin seed oil
  • 25 g water
  • 3 tsp marjoram
  • 1/2 tsp freshly ground black pepper
  • 1 tsp hummus spice mix (e.g., from Stay Spiced! or a blend of ground cumin, coriander, parsley, and lemon salt)
  • 1 tsp salt
  • 1 1/2 tsp vinegar
  • Garnish: fresh spring onion slices and dried calendula petals

PREPARATION

  1. Prep the ingredients: Roughly chop the spring onion and garlic. Drain the cooked beans thoroughly.
  2. Blend: Add all ingredients – spring onion, garlic, vegetable broth paste, beans, pumpkin seed oil, water, marjoram, pepper, hummus spice, salt, and vinegar – to a Thermomix or food processor. Blend until smooth and creamy.
  3. Adjust seasoning: Taste and adjust with more salt, vinegar, or spice, if needed.
  4. Serve: Spoon the hummus into a serving dish and garnish with freshly sliced spring onions and dried calendula petals for a touch of color and flavor.
TIP

If you don’t have a Thermomix, simply use an immersion blender—it works just as well!
