INGREDIENTS

Ingredients for approx. 6 jars (200 ml each):

  • 1 kg kiwi
  • 2 ripe pears
  • 1 vanilla pod
  • 500 g gelling sugar (2:1 ratio)

PREPARATION

  1. Prepare the ingredients:
    – Peel the kiwis and cut them into small pieces.
    – Peel, core, and dice the pears.
    – Split the vanilla pod lengthwise and scrape out the seeds with a knife.
  2. Prepare the fruit:
    – Add the kiwi and pear pieces, along with the vanilla seeds and the scraped pod, to a large pot.
    – Use an immersion blender to roughly puree the mixture, leaving small fruit chunks for texture.
  3. Add the sugar:
    – Stir the gelling sugar into the fruit mixture until well combined.
    – Let it sit for 30 minutes to allow the sugar to dissolve and draw out the fruit juices.
  4. Cook the jam:
    – Place the pot on the stove and bring the mixture to a boil while stirring.
    – Once it reaches a rolling boil, let it cook for 4 minutes, stirring constantly to prevent burning.
  5. Perform a gel test:
    – Place a small amount of the hot jam onto a plate and let it cool briefly. If the mixture sets, the jam is ready. If not, cook for another minute and test again.
  6. Fill the jars:
    – Pour the hot jam into sterilized jars, filling them nearly to the top.
    – Seal the jars immediately with lids and turn them upside down for 5 minutes to create a vacuum seal. Then turn them upright and let them cool completely.
TIP
  • You can remove the boiled vanilla pod after cooking or leave it in the jars to intensify the flavors.
  • For a particularly fine consistency, puree the mixture completely if you don’t prefer chunks of fruit.
  • The jam can also be easily prepared in a Thermomix: To do this, boil the jam down at 100 degrees on level 2 for approx. 6 minutes.
