  1. Preparation: Preheat the oven to 200 °C (392 °F) and line a baking tray with baking paper.
  2. Prepare the spice mix: In a large bowl, combine the spices (pineapple curry, orange curry, green and red curry, ginger powder, cumin, salt, and chili) with the oil, chopped garlic, and spring onion.
  3. Marinate the rice: Add the cooked rice to the spice mix and mix thoroughly until all the rice grains are evenly coated with the marinade.
  4. Baking: Spread the spiced rice mixture evenly on the prepared baking tray. Ensure the layer is as thin as possible for even crispiness.
  5. Bake until crispy: Place the tray in the preheated oven and bake the rice for about 20–25 minutes until crispy. Stir or toss the rice halfway through to ensure all sides turn golden brown.
  6. Serve: Remove the crispy rice from the oven, let it cool slightly, and serve as desired.
