Iced Dubai Chocolate Mocha

The Iced Dubai Chocolate Mocha is a perfect blend of intense flavors, creamy pistachio espuma and a light, oriental touch – the perfect companion for sunny days when you need a cool drink that is not only refreshing but also tasty.

Preparation – easier than you think!

To make the pistachio espuma, whip a mixture of cream, sugar syrup, milk and pistachio cream with a hand blender and pour into an iSi Whip. After a resting time in the fridge, an airy foam is created, which forms the heart of this drink.

The actual mocha is just as quick to prepare: Cold milk, an espresso shot and ice cubes create the perfect color gradient in the glass. With a generous layer of pistachio espuma, grated chocolate and some Kadayif as a topping, this drink becomes an absolute sensation.

INGREDIENTS

Ingredients for the topping, the pistachio espuma:

  • 150 ml cream (or plant-based alternative)
  • 50 ml sugar syrup
  • 250 ml milk (or plant-based alternative)
  • 100 g pistachio cream
  • 1 iSi Professional Charger

 

Ingredients for the chocolate mocha:

  • Ice cubes
  • 250 ml milk (or plant-based alternative)
  • 1 espresso shot
  • 1 pinch of Kadayif
  • 1 pinch of grated chocolate

PREPARATION

  1. For the topping, briefly blend the milk, cream, syrup and pistachio cream with a hand blender (add green food coloring if required).
  2. Pour the entire mixture into a 0.5 l iSi Whip.
  3. Screw on an iSi Professional Charger and shake vigorously 8 to 10 times.
  4. For best results, chill the appliance for at least three hours. Shake again before using for the first time.
  5. For the Chocolate Mocha, fill a glass or mug halfway with ice cubes, pour cold milk over it and carefully add a shot or double shot of espresso to achieve a nice color gradient.
  6. Top the drink with a generous portion of pistachio espuma, grated chocolate and crunchy kadayif.
