They are super easy to prepare, casein-free and can be individually refined with spices. With their nutty sesame flavor and extra crunch, they are guaranteed to become your new favorite snack.

Why is sesame so healthy?

Sesame contains plenty of blood-building iron and bone-strengthening calcium as well as the trace element selenium, which strengthens our immune system and protects cell membranes. Nicotinic acid or niacin, formerly known as vitamin B3, is important for the regeneration of skin, muscles, nerves and DNA.

Sesame is not only a highlight in terms of taste, but also a real superfood. The small seeds are rich in valuable nutrients such as calcium, magnesium and iron. Black sesame in particular contains many antioxidants that are good for the body. They also provide healthy fats and plant-based protein, making sesame a nutrient-rich ingredient for healthy snacks.

INGREDIENTS

  • 100 g whole grain rice flour
  • 10 g locust bean gum
  • 40 g potato starch
  • 3 tbsp white sesame seeds (roasted)
  • 2 tbsp black sesame seeds (for crunch)
  • 1 tsp salt
  • 1/2 tsp paprika powder or cumin (optional, for a spicy note)
  • 60 ml olive oil (tip: chili olive oil for a spicy note)
  • 80 ml water (a little more if necessary)

PREPARATION

  1. Make the dough: Mix the flour, sesame seeds, salt and spices in a bowl. Add olive oil and water and knead into a smooth, supple dough.
  2. Roll out: Roll out the dough thinly (approx. 2 mm) between two baking papers. This means nothing sticks and the dough can be spread out evenly and thinly.
  3. Cutting: Cut the dough into diamonds, squares or strips – whatever you like. Or cut out round.
  4. Bake: Place the crackers on a baking tray lined with baking paper. Brush with a little water and optionally sprinkle with coarse salt for that extra crunch.
  5. Oven: Bake at 180°C (fan oven) for about 12-15 minutes until the crackers are golden brown and crispy.
  6. Allow to cool: For extra crunch, let the crackers cool after baking with the oven door slightly open.
TIP
  • Variety of aromas: Play with spices – such as rosemary, thyme, curry or even a little lemon peel – and always discover new taste experiences.
  • Spicy version: The crackers get a spicy note with chili olive oil.
