INGREDIENTS

  • 200 ml almond milk (for a nutty, delicate base)
  • 100 ml beetroot juice (for sweetness and an intense color)
  • 1 tbsp MCT oil or olive oil (for a smooth texture)
  • ½ tsp cumin (for a warm aroma)
  • ½ tsp ginger, freshly grated or as powder (slightly spicy & metabolism-boosting)
  • Salt & pepper to taste
  • Optional: a splash of lemon juice for extra freshness
  • 2 tsp vegan cream cheese (e.g., almond- or cashew-based)
  • 1 tbsp fresh chives, finely chopped

PREPARATION

  1. Reduction & Heating: Gently heat the almond milk and beetroot juice in a small saucepan over medium heat, but do not let it boil. This intensifies the flavor.
  2. Seasoning: Add cumin, ginger, salt, and pepper, stirring well.
  3. Emulsifying: For an extra fine, silky consistency, lightly froth the essence with an immersion blender.
  4. Refining: Finally, stir in the MCT or olive oil and optionally round off with a splash of lemon juice.
  5. Plating: Pour the essence into small bowls or cups. Use two teaspoons to shape small dumplings from the vegan cream cheese and place them on top of the essence. Sprinkle with fresh chives and serve immediately.
