Pea dip

Green and healthy! This refreshing dip is the perfect addition as a side dish for barbecuing, as a spread between meals or for dipping vegetable sticks, crackers or taco chips.

Peas are one of the oldest cultivated vegetables in the world and have an impressive history dating back up to 10,000 years. Originally native to Asia and the Mediterranean, peas were already valued as food by the ancient Egyptians and Romans. Today, they can be found in many cuisines around the world and enjoy great popularity due to their sweet taste and wide range of uses.

But not only is their taste impressive, their nutrient density is also impressive. Peas are rich in vegetable protein, fibre, vitamins (especially vitamin C and vitamin K) and minerals such as iron and zinc. They also contain important antioxidants that can help reduce cell damage and strengthen the immune system.

INGREDIENTS

  • 600 g frozen peas
  • 1 bunch parsley
  • 1 bunch cress
  • 1 bunch thyme
  • 1 lemon
  • 1 clove garlic
  • 2 tsp green pepper
  • 0,25 ml whipped cream
  • 150 g mayonnaise
  • 1 pinch salt
  • 1 pinch nutmeg

PREPARATION

  1. Heat some water in a pot and let the peas soak in it for about 10 minutes.
  2. Chop the herbs and mix with the juice of the lemons, the crushed garlic and green pepper.
  3. Purée the peas with a hand blender and stir in the whipped cream.
  4. Finally, mix the herbs with the peas and stir in the mayonnaise. Season to taste with salt and nutmeg.
