INGREDIENTS

  • 1 courgette green
  • 1 courgette yellow
  • 1 onion
  • 1 clove of garlic
  • 2 cans of chunky tomatoes (400 g each)
  • 1 fresh green pepper
  • 1 tbsp oil
  • 100 g Styrian beetle beans
  • 50 g sweet corn
  • freshly ground pepper
  • salt
  • chilli flakes
  • fresh basil
  • 1 tsp Mediterranean Universal Spice

PREPARATION

  1. Peel and dice the onion and garlic.
  2. Heat the oil in a large saucepan. Sauté the onion and garlic.
  3. Add the tomatoes and simmer for 2-3 minutes. Remove from the heat.
  4. Add the chopped peppers, fresh chopped basil, corn, beetle beans. Season with salt, pepper and chilli.
  5. Pour the sauce into an ovenproof dish.
  6. Cut the courgettes into strips. Season with the Mediterranean all-purpose seasoning, salt and pepper.
  7. Place the courgettes on the tomato sauce and cook in the oven at 180°C for approx. 20 minutes.
