Aromatic herb butter with fresh garden herbs

How long does the butter last?

This homemade butter will keep for a week in the fridge. If you freeze it, it can be used perfectly for nine months. My tip: either fill these into an ice cube tray to have small, manageable pieces. Or wrap them well in cling film.

How do you know that herb butter is bad?

When is butter bad? We can recognize bad butter by a very dark yellow color, a rancid or sour smell or a rancid taste. When storing butter, you should make sure that the butter does not come into contact with other foods.

INGREDIENTS

  • 200 g butter (room temperature)
  • 1 bunch of basil
  • 1 bunch of parsley
  • 1 bunch of chives
  • 1 bunch of thyme
  • 1 bunch of rosemary
  • 1-2 cloves of garlic
  • 1 tsp lemon juice
  • Salt and pepper to taste

PREPARATION

  1. Prepare the herbs: Wash the fresh herbs, shake dry and chop finely. Pull the thyme and rosemary from the stems.
  2. Chop garlic: Peel and finely chop the garlic cloves.
  3. Beat the butter: Put the butter at room temperature in a bowl and beat it until fluffy with a hand mixer or whisk.
  4. Mix the ingredients: Add the chopped herbs, garlic and lemon juice to the butter and mix everything well.
  5. Seasoning: Season with salt and pepper.
  6. Cool: Place the finished herb butter in a sealable container and let it solidify in the refrigerator.
