Asian cucumber salad: Fresh recipe with sesame and soy sauce

Asian cucumber salad is very popular right now. In the well-known cooking show “Die Küchenschlacht” a particularly impressive variation was presented together with Alfons Schuhbeck: crispy tempura king prawns with two types of mayonnaise and Asian mango and cucumber salad. This creative combination shows how versatile and inspiring Asian cuisine can be.

INGREDIENTS

  • 1 cucumber
  • 1 tsp sesame, white
  • 1 tsp black sesame seeds
  • 1 green onion
  • 1 tbsp sesame oil
  • 2 tsp lime juice
  • 4 tbsp soy sauce
  • 1 tsp honey
  • 1 tbsp rice vinegar
  • Salt and pepper
  • 1 clove of garlic
  • 1 pink berries (red pepper whole)

PREPARATION

  1. For the Asian cucumber salad, first roast the sesame seeds without fat in a pan for about 3 minutes at a medium heat. Then put it in a bowl and let it cool.
  2. Then wash the cucumber, cut off the ends, cut in half, remove the seeds with a teaspoon and cut into pieces.
  3. Then peel the onions and garlic and cut them into fine cubes.
  4. Finally, mix all the ingredients and season with soy sauce and honey and garnish with the pink berries.

The roasted sesame already offers a delicious crunchy topping for the cucumber salad. But there is more! Depending on your taste, we have a few ideas in store for you:

  • coriander: It is simply part of Asian cuisine. If you love the special taste, you can use it to give the Asian cucumber salad a spicy aroma.
  • Fruit: Fruity and savory often make great combinations. Mango, passion fruit or papaya, among others, go perfectly with the Asian taste of the salad.
  • Nuts and seeds: Do you want a crunchy topping? Then we can warmly recommend roasted peanuts or cashews.
