Asian Pasta: A Feast for the Senses

Today, I have a special recipe for you: pasta noodles in an Asian style. This dish combines the delicious flavors of Asian cuisine with the beloved texture of pasta. With peas, red bell pepper, and Chinese cabbage, you’ll create a colorful and healthy dish that’s not only tasty but also rich in nutrients. Asian cuisine is known for its vegetable-forward approach and the use of fresh, aromatic ingredients. It emphasizes balance and variety, perfectly reflected in this recipe.

INGREDIENTS

Ingredients for the Stir-Fry:

  • 1 cup frozen peas
  • 1 red bell pepper
  • 1/4 Chinese cabbage
  • 1/2 leek
  • 1/2 garlic clove
  • A bit of fresh ginger
  • 1 tbsp oil (preferably sesame oil)
  • Salt, pepper
  • 250 g pasta (Linguine al Bronzo)

 

Ingredients for the Sauce:

  • 150 ml vegetable broth or water
  • 3-4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 tbsp cornstarch
  • A pinch of chili flakes

PREPARATION

  1. Cook the pasta in salted water until al dente (do not overcook).
  2. Cook the peas, then shock them in ice water and set aside.
  3. Cut the bell pepper and Chinese cabbage into strips.
  4. Heat the oil in a pan or wok and sauté the ginger and garlic over medium heat, stirring frequently, for about 2 minutes.
  5. Add the vegetables and seasonings, and stir-fry for about 5 minutes until the vegetables are tender. Add a splash of water or vegetable broth if necessary to prevent burning.
  6. For the sauce, combine all ingredients in a medium bowl and whisk together or shake the ingredients in a jar with a lid.
  7. Pour the sauce into the pan and bring the mixture to a boil. Let the sauce simmer for about 1 minute.
  8. Add the drained pasta and mix well. Fry for another 1-2 minutes, taste, and add more salt, pepper, or soy sauce if needed. For a creamier texture, you can add a few spoonfuls of peanut butter!

This recipe is incredibly flexible, and you can use any vegetables you have at home or crave, such as:

  • Bean sprouts
  • Snow peas
  • Spinach/Kale
  • Pak Choi
  • Onions
  • White cabbage
  • Edamame
  • Corn
  • Eggplant
