INGREDIENTS

  • 1/3 head of broccoli
  • 1/3 head of cauliflower
  • 1/3 batch of organic king oyster mushrooms
  • 2 eggs
  • ½ pack of cream cheese
  • 100-200 g grated cheese (type to taste)
  • Salt and pepper
  • Fresh parsley
  • Fresh spring onions
  • Bruschetta seasoning, if available
  • A bit of savory

PREPARATION

  1. Sauté the spring onions, parsley, and king oyster mushrooms in a pan and set aside.
  2. Once cooled, mix the mushrooms with the cream cheese, half of the grated cheese, and the spices.
  3. Cook the cauliflower and broccoli florets until tender-crisp, about 5 minutes.
  4. Preheat the oven to 180°C (350°F) fan-assisted.
  5. Grease a baking dish and layer all the ingredients, topping with the remaining cheese.
  6. Bake in the oven until the cheese is golden brown.
