Candiing rose petals is a simple process that produces an impressive result. With just a few ingredients and a little patience, you can create beautiful, crunchy rose petals that will add a touch of elegance to any dessert.

Shelf life of candied flowers

Flowers candied with egg white look prettier than those prepared with gum arabic. However, they only have a short shelf life and should be consumed within 4-5 days. This shouldn’t be a problem as they are so delicious that they will be eaten quickly. It is advisable to only make small quantities at a time to preserve the freshness and scent.

Edible rose petals: what to look out for

Not all rose petals are edible. To ensure that the leaves are edible, you should use wild and cultivated roses from the Rosa genus. Make sure to choose unsprayed roses from your own garden or from trusted sources. Other types of roses such as peonies, Christmas roses or hollyhocks are not suitable for consumption.

Candiing with alternative sweeteners

If you don’t want to use sugar, you can also candy rose petals with honey or maple syrup. Another option is to use substitutes such as birch sugar. In this recipe, coarse granulated sugar is used to nicely coat the flowers.

INGREDIENTS

  • 2 pieces of egg white
  • 4 pieces of rose heads (depending on size)
  • 200 g granulated sugar

PREPARATION

  1. Carefully wash the rose heads (only the flowers of unsprayed roses) and pat dry with kitchen paper.
  2. Briefly beat the egg whites with a fork (beat only lightly, not until stiff).
  3. Using a brush, brush the rose petals with the egg white and sprinkle them thickly with sugar.
  4. Place the rose petals on a baking tray lined with baking paper and let them dry in the oven at 40 degrees for about 2 hours.
