INGREDIENTS

Chicken:

 

Leek lentils:

  • 1 leek
  • 100 g mountain lentils
  • 300 ml vegetable stock
  • 2 tsp Dijon mustard
  • salt, pepper
  • Lemon juice
  • Spring onion

 

PREPARATION

Chicken

  1. make a fine diamond pattern on the upper side of the chicken breasts so that the marinade can adhere better later.
  2. Roll in 2-3 tbsp flour.
  3. Put 3 tbsp butter in the pan.
  4. Roast the chicken breasts in the melted hot butter.
  5. Roast for 2-3 minutes on the lower side, which is not cut into, over a high heat until golden brown.
  6. Turn the chicken breasts over and roast for a further 2 minutes.
  7. Now salt and pepper the breasts.
  8. Reduce the heat to medium.
  9. Add 3 tablespoons of butter to the pan.
  10. Finely chop the garlic cloves.
  11. When the butter has almost melted, add the garlic and sauté briefly.
  12. Add 3 tablespoons of honey.
  13. Add the soy sauce and cider vinegar, bring to the boil and reduce.
  14. Turn the chicken breasts regularly.
  15. Sprinkle with spring onions and serve.

 

Leek lentils

  1. Cut the leeks into fine rings and put them with the washed lentils into a pot with the vegetable stock. Bring to the boil and then simmer over a low to medium heat with the lid on for about 30 minutes until the lentils are cooked but still firm to the bite.
  2. Stir in the mustard and season with salt, pepper and lemon juice. Finally, sprinkle the chopped spring onion on top.
