Do you have leftover vanilla pudding powder and are looking for a creative recipe to use it up? These pudding cookies are not only quick and easy to make, but also incredibly delicious. These delicate cookies literally melt in your mouth and are the perfect accompaniment to tea or coffee. Pudding is probably familiar to everyone – whether as a sweet dessert or as a base for other occasions.

But what exactly is pudding?

Pudding, as it is traditionally prepared, consists of various basic ingredients that are cooked in a water bath. Classically, an egg milk mixture serves as a binding agent, creating a soft, creamy consistency. Pudding is usually served warm, but in modern recipes it is also used cold or as a firmer version.

What’s in the pudding powder?

The common pudding powders that you find in the supermarket usually contain corn starch, salt, flavorings and colors such as carotene. This mix is often vegan and gluten-free, but it’s always a good idea to check the packaging for possible additives just to be sure.

For all those who, like me, are not the biggest fan of pudding or are simply looking for a creative alternative, there are these wonderful pudding cookies. They’re a great way to use up leftover vanilla pudding powder and whip up something delicious at the same time. They may look inconspicuous, but they taste great all the way!

These delicious pudding cookies are perfect for any occasion. They are easy to prepare and can be prepared in advance or baked at short notice. Particularly great: They offer an ideal way to use leftover vanilla pudding powder in a sensible and tasty way.

INGREDIENTS

  • 108g rice flour
  • 54 g cornstarch or potato starch
  • 7 g locust bean gum
  • 7 g psyllium husks
  • 80g powdered sugar
  • 1 packet of vanilla pudding powder (37 g)
  • 1 packet vanilla sugar
  • 180 g soft butter (vegan)
  • Some powdered sugar for sprinkling

PREPARATION

  1. Preparation: Line a baking tray with baking paper.
  2. Prepare the dough: Mix the flour, powdered sugar, pudding powder and vanilla sugar well in a bowl. Then add the softened butter and knead quickly into a smooth dough.
  3. Chill the dough: Let the dough rest in the refrigerator for about 45-60 minutes.
  4. Preheat the oven: Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees).
  5. Form cookies: Divide the dough into about 30 equal pieces. Form these into small balls with your hands.
  6. Baking: Place the balls on the baking tray with enough space between them as they will spread apart during baking. Bake in the preheated oven for about 12-14 minutes, until the cookies are lightly golden brown.
  7. Finish: Let the cookies cool and sprinkle with powdered sugar if desired.
TIP

The dough can be prepared up to 3 days in advance and stored in the refrigerator. To do this, flatten the dough, wrap it in cling film and store it in the fridge.
