Gazpacho with tomato and mozzarella skewers

Adapted to the climatic conditions, the Spanish gazpacho andaluz, among others, has established itself as a kitchen classic. WIBERG reinterprets and serves the quintessential refreshing soup in a completely new way. The gazpacho cocktail with tomato and mozzarella skewers is based on the classic combination of tomatoes, cucumber and peppers and is refined with basil oil and Italian-style salad. The unique Rubino pepper is a bright red highlight for the cocktail rim.

INGREDIENTS

  • 10 yellow cherry tomatoes, skinless
  • 10 baby mozzarella
  • 100 g tomatoes
  • 80 g red pepper
  • 80 g cucumber
  • 500 ml tomato juice
  • 1 tbsp tomato puree
  • 50 ml red pepper puree
  • 3 tbsp WIBERG basil oil
  • 1 tbsp WIBERG Italian Style Salad

PREPARATION

  1. Place the cherry tomatoes and mozzarella balls on a skewer.
  2. Moisten the rim of the glasses and dip in paprika rubino.
  3. Puree the tomatoes, peppers, cucumber, tomato juice and tomato puree and season with the paprika puree, Italian salad and basil oil.
