Germ Dough Biscuits filled with Bacon and Cheese

INGREDIENTS

For the yeast dough:

  • 650 g wheat flour
  • 250 ml lukewarm water
  • 1 tbsp rum
  • ½ tsp salt
  • 50 g honey
  • 30 g yeast
  • 1 egg
  • melted butter
  • 1 egg to coat the pastry
  • Sesame seed

 

For the filling:

  • 300 g bacon
  • 250 g cheese, grated
  • 2 cups crème fraîche
  • 1 tsp salt
  • ½ tsp pepper

 

PREPARATION

  1. Mix the honey, salt, yeast and rum with the lukewarm water using a spoon.
  2. Add the egg and stir in.
  3. Stir in the flour.
  4. Add the melted butter and mix to a smooth dough.
  5. Leave to rise in the oven at 40-50°C for about 20 minutes. Put a cooking spoon in the oven door to keep the air circulating.
  6. Take the dough out of the oven, knead it well and leave it in the oven for another 10 minutes.
  7. Mix the ingredients for the filling.
  8. Remove the dough from the oven. Form a long roll with half the dough, cut off pieces of equal width so that the dough pieces are roughly the same size.
  9. Roll out the small pieces with your rolling pin, fill with about 1 tsp of filling and form a ball.
  10. Place the balls on a baking tray lined with baking paper.
  11. Brush the balls with beaten egg and sprinkle with sesame seeds.
  12. Bake for about 25 to 30 minutes at 175°C with top and bottom heat until golden brown.
