Homemade marshmallows without additives

Homemade marshmallows are not only easy and quick to prepare, but also do not contain any unnecessary additives, as can often be found in store-bought versions from the supermarket. With this recipe you can design and enjoy marshmallows according to your taste – and the best part: they taste much better and are easy to customize!

What are marshmallows called in German?

The term “marshmallow” is derived from the plant “swamp mallow” or “marshmallow”. The juice from the root of this plant has been used to make sweets over a thousand years ago. “Mouse bacon” originally comes from France.

How are marshmallows eaten?

Marshmallows have a variety of uses – they add a pleasant sweetness to sour ingredients like rhubarb, can be chopped into small pieces and added to hot chocolate, or can even be used in baking.

What’s in marshmallows?

That depends entirely on the preparation. You will find variants with chicken protein, gelatin, water, corn flour, glucose, sugar as well as various colors and flavors.

What is the difference between “mouse bacon“ and marshmallows?

The candy was originally made from “swamp mallow” and called “marshmallow.” Today the foam sugar product is often referred to as “mouse bacon”.

Why do we say “mouse bacon“?

The pink and white foamy sugar pieces used to be reminiscent of bacon that was placed in mousetraps. Today foam sugar in all possible shapes and colors is called “marshmallow”.

Why do you grill marshmallows?

The brown roasting through the Maillard reaction gives marshmallows their typical caramel taste. You can also roast the marshmallows without a grill: simply put the marshmallows in a fireproof baking dish and heat them at 160 °C top and bottom heat for about 8 minutes. A gas burner or lighter should not be used, otherwise the marshmallows will take on the taste of gas.

How do you store marshmallows?

Marshmallows should be stored in an airtight container at room temperature. This way they stay fresh for 3-4 weeks.

INGREDIENTS

Makes 1 sheet of marshmallows

  • 250 g powdered sugar
  • 2 packets of gelatin powder or 11 sheets of gelatin
  • 1 tsp vanilla extract
  • 150 ml water
  • 2 tbsp cornstarch for dusting
  • 2 tbsp powdered sugar for dusting
  • Vegetable oil for the mold

 

For decoration:

PREPARATION

  1. Sieve the powdered sugar and cornstarch and mix. Brush a baking tray with oil or grease it well with an oiled paper towel.
  2. Sift the mixture of cornstarch and powdered sugar generously onto the bottom of the mold so that the marshmallows can be released more easily later.
  3. Preparation with the leaf gelatine:
    Soak in cold water, warm the water in a pot, squeeze out the gelatine and add it to the warm water. Heat until dissolved, but don’t let it get too hot.

    Preparation with the gelatin powder:
    Heat the water in a pot, stir in the gelatine and let it dissolve, but do not let it get too hot.

  1. Slowly add the gelatin mixture to the sifted powdered sugar in the food processor set on low speed.
  2. Once all the liquid has been added, turn the food processor to high and stir for 5 minutes until a fluffy cream forms.
  3. If desired, add food coloring or flavors such as vanilla and stir well again.
  4. Pour the mixture into the prepared form and smooth it out.
  5. Optional: Sprinkle with raspberry powder or sugar sprinkles.
  6. Cover with cling film and refrigerate for about 4 hours until the mixture is firm.
  7. To turn out: Dust with powdered sugar and cornstarch, remove the mixture from the edge and turn out, then cut into pieces or cut out.
  8. Store in an airtight container.
TIP

You can prepare your marshmallows however you like. You can use fruit juice instead of water. Do you like chocolate? Then add either liquid chocolate or chocolate sprinkles or chocolate chips.

Are you preparing for the next barbecue season? Then put the mixture into a small baking dish, turn it out, cut out shapes as desired and put the marshmallows on wooden sticks. This way, your dessert is already secured when you grill it!

Another tip: The marshmallow cream can be applied as a topping for cakes and cupcakes, but also on bread or a roll and eaten.
