Juicy chicken breast fillets from the oven

INGREDIENTS

  • 2 chicken breast fillets
  • 2 onions, red
  • 125 ml vegetable broth or chicken broth
  • 1 pepperoni
  • Salt and pepper
  • Paprika powder, sweet
  • 2 slices of lemon
  • 1 tsp olive oil for the mold

PREPARATION

  1. Preheat the oven to 160°C fan oven. Wash the chicken breast fillets and pat dry with kitchen paper. Season with sweet paprika, salt and pepper on both sides and fry briefly in a pan with a little oil.
  2. Cut the onions into thin rings. Place in a greased casserole dish together with the chili peppers and lemon wedges and just cover with the broth.
  3. Then place the chicken breast fillets on top so that they rest on the onions. Now put in the oven for approx. 15 – 20 minutes (depending on thickness).

    Because the liquid evaporates, the chicken doesn’t dry out as quickly and still remains crispy because it doesn’t cook in the broth.

TIP

The “bed” for the chickens can be varied endlessly. You can use spring onions, strips of pepper, a finely chopped chili pepper, fennel, various herbs such as rosemary or sage and much more…
