Discover the best recipe for juicy peach sheet cake, which was already baked by my grandmother and is still a highlight. This cake is incredibly fluffy and quick to prepare – ideal for any occasion. I have tried countless other recipes since then, but for me this recipe is and remains the best sheet cake recipe. Perfect with coffee or as a dessert, this peach sheet cake will impress you.

INGREDIENTS

  • 4 eggs
  • 1 pinch of salt
  • 85g granulated sugar
  • 85g brown sugar
  • 1 pkg vanilla sugar
  • 125ml water
  • 125 ml oil
  • 250 g flour
  • 1 pkg baking powder
  • Oil for greasing the mold
  • 7 peaches

 

For decoration:

  • Powdered sugar

 

For the gluten-free alternative, replace the 250 g flour with:

  • 150g rice flour
  • 75 g corn starch or potato starch
  • 10 g locust bean gum
  • 10 g psyllium husks

 

Tip: If you don’t have locust bean gum, simply use 10 g more of the corn starch or potato starch, this has no influence on the result!

PREPARATION

  1. For this simple oil cake, separate the eggs and beat the egg whites with a pinch of salt and a hand mixer until stiff peaks form.
  2. Then stir the yolks, sugar and vanilla sugar in another bowl until foamy.
  3. Then add water and oil and continue to beat until foamy.
  4. Mix the flour with baking powder or, for the gluten-free alternative, mix all the flours together well, sift and stir into the yolk mixture.
  5. Now just fold the egg whites into the mixture and stir into a creamy dough.
  6. Then place the dough in a tray lined with baking paper.
  7. Core the peach and cut into wedges – about 6 wedges per peach. Place the wedges on the dough. DO NOT press firmly. The dough rises during baking anyway, so that it encloses the peaches wonderfully.
  8. Bake at 180 degrees (top/bottom heat) in the preheated oven for about 20 minutes.
  9. If necessary, you can sprinkle the cake with icing sugar.
TIP

Of course, you can also use other fruit: apples, pears, apricots, cherries, plums, cranberries and much more are also ideal for this cake.
