INGREDIENTS

  • 225 g cooked lentils
  • 50 g red onion (half a small onion)
  • 5 g garlic (half a clove)
  • 75 g breadcrumbs (you can use glutenfree as well)
  • 25 g fresh herbs (e.g., parsley, thyme)
  • 2 tbsp tomato paste
  • 1 egg
  • 2–3 g salt (approx. 1/2–1 tsp)
  • 1 g black pepper (approx. 1/2 tsp)
  • 1 g smoked paprika (approx. 1/2 tsp)
  • 2 g Italian herbs (e.g., oregano) (approx. 1 tsp)
  • 1 tsp soy sauce
  • Juice of half a lime (approx. 1 tbsp)

PREPARATION

  1. Prepare the ingredients:
    – Finely chop the red onion and garlic.
    – Sauté the onion and garlic in a pan until softened and fragrant.
  2. Mix the ingredients:
    – In a food processor or Thermomix, combine the cooked lentils, sautéed onion and garlic, breadcrumbs, fresh herbs, tomato paste, egg, salt, pepper, smoked paprika, Italian herbs, soy sauce, and lime juice. Blend until the mixture is well combined but still slightly textured.
  3. Shape the balls:
    – With your hands, form small balls (approximately 2–3 cm in diameter) from the mixture. Place them on a baking tray lined with parchment paper.
  4. Bake:
    – Preheat the oven to 200°C (392°F). Bake the lentil balls for 30–35 minutes, turning them halfway through, until they are golden brown and firm.
  5. Serve:
    – Pair the lentil balls with tzatziki, a creamy dip, or even a spicy sauce. They’re perfect for sharing as part of a mixed appetizer platter or enjoyed on their own as a snack.

Feel free to experiment with the spices to match your taste preferences. Try adding a pinch of curry powder for a warm, aromatic touch or chili flakes for extra heat. These lentil balls are also freezer-friendly, making them a convenient option for meal prep!
