Lentil salad with feta cheese

Lentils are an excellent source of vegetable protein, fibre and various vitamins and minerals. Together with the crunchy pieces of pepper, sweet corn and aromatic spring onions, the result is a perfect combination of flavour and healthy ingredients.

To give the salad even more flavour, the feta cheese is marinated in a tangy marinade of olive oil, lemon juice and herbs. This combination of saltiness and freshness gives the salad an extra kick and makes it a real taste experience.

This lentil salad is perfect as a main course for a light and healthy dinner or as a side dish with grilled meat or fish. INGREDIENTS

  • 250 g champagne lentils
  • 1 pepper
  • 1 spring onion
  • 1 small tin of sweetcorn
  • 200 g feta cheese
  • Apple cider vinegar
  • Olive oil
  • Salt, pepper
  • Chives
  • Bruschetta green olive seasoning

PREPARATION

 

  1. For this salad, soak the lentils in water and leave for a few hours or overnight.
  2. Put the lentils in a saucepan with the water and cook until soft. The water should cover the lentils well.
  3. Strain the cooked lentils and rinse with cold water.
  4. Marinate the lentils with salt and vinegar while they are still warm and leave to cool.
  5. Finely chop the spring onions and dice the peppers.
  6. Strain the sweetcorn and rinse with cold water.
  7. Cut the feta into small pieces and marinate with 3 tbsp olive oil and 1 tbsp bruschetta seasoning.
  8. Mix all the ingredients together and season with olive oil.
  9. Season the lentil salad with salt and pepper to taste.
