What do you use herbal oil for?

Herbal oil preserves the aroma of fresh herbs such as rosemary, thyme or wild garlic, which are only available seasonally. By preserving them in oil, the taste and scent of the herbs are retained for a long time. Homemade herb oil is ideal as a seasoning for salad dressings, marinades, as well as for cooking, frying or grilling.

How long do herbs last in oil?

It is important that all herbs are completely covered with oil to prevent mold from forming. Fresh herbs in oil can be enjoyed for about 6 weeks, while dried herbs can last up to 6 months when preserved in oil.

Which herbs have essential oils in them?

Many herbs contain essential oils that can have medicinal effects. You should therefore be well informed before use. Examples of such herbs include:

  • Bergamot

  • Rosemary
  • Sandalwood

How do you preserve fresh herbs?

There are different methods to preserve fresh herbs. You can dry them, freeze them or make herb butter. The production of herbal oil or herbal salt is also a popular method for preserving the aromas. INGREDIENTS

  • 500 ml high quality olive oil
  • 1 bunch of fresh rosemary
  • 1 bunch of fresh thyme
  • 1 bunch of fresh oregano
  • 3-4 cloves of garlic
  • 1 tsp black peppercorns
  • 1 tsp coarse sea salt
  • Zest of 1 organic lemon or / and a piece of salted lemon

PREPARATION

  1. Prepare herbs: Wash the fresh herbs (rosemary, thyme and oregano) and pat dry. Then roughly chop the herbs.
  1. Prepare garlic and lemon: Peel the garlic cloves and press them lightly. Finely grate the peel of the organic lemon, making sure to only use the outer yellow layer, as the white layer tastes bitter.
  1. Prepare oil: In a clean, sterile glass bottle, add the prepared herbs, garlic, lemon peel, peppercorns and coarse sea salt. Pour the olive oil over it until all the ingredients are completely covered.
  1. Steeping time: Close the bottle tightly and let the herbal oil steep in a dark, cool place for at least a week so that the aromas can develop well. Shake the bottle lightly occasionally.
  2. Usage: After the steeping time, the herbal oil is ready for use. It is ideal for marinating meat and fish, as a dressing for salads or for drizzling on grilled vegetables and bread.
TIP

The herbal oil will last for several weeks if stored in a cool, dark place. Make sure the herbs are always covered with oil to extend their shelf life.
