But first of all, let’s talk about the terms: What is the difference between a marinade, a glaze and a rub?

Marinating – The art of grilling

There are two main goals that can be achieved with a marinade. On the one hand, the marinade changes the structure of the meat by making the acid it contains more tender and soft. On the other hand, the marinade changes the taste of the meat by penetrating the meat. Nowadays, the taste-changing effect is often in the foreground. However, for particularly firm types of meat, such as game, the tenderizing effect remains of great importance.

The glaze – the finishing

Glazes often contain sugar, which can raise questions but also explains the function of the glaze. In the last minutes of the cooking process, the grilled food is coated with the glaze. The sugar caramelizes and gives the meat a special taste and an aromatic crust. If the glaze were applied from the beginning, the sugar could burn and affect the flavor.

Rub – The dry marinating

The rub is particularly widespread in the BBQ area. In contrast to the marinade, the focus here is on taste. This dry spice mixture is generously applied to the meat and massaged in before grilling. The rub can work for several hours and forms a crust during cooking that not only tastes great but also protects the meat from drying out.

Should you marinate grilled meat?

If you have high-quality meat, you should avoid using marinade. This is especially true for short-fried foods. Salt and pepper are often enough here. However, marinating can make meat more tender and refine the taste, for example with oils and spices.

What do you need for marinating?

The classics are lemon juice, vinegar, yogurt or wine. These extra ingredients really loosen up the meat marinade. Salt: Salt should not be missing in any marinade. It makes the meat juicy when marinated and can therefore be included in plenty in the marinade.

Which marinade tenderizes meat?

Should you use an oil marinade? Some of the best oils for pickling meat are olive oil and sunflower oil. Both add flavor to the meat and ensure that it remains tender and juicy. Variants such as rapeseed oil, hemp oil and pumpkin seed oil are also possible.

Why glaze?

A little flavor kick is particularly recommended with chicken. However, as already briefly described, a glaze should never be put on the grilled food at the beginning, but rather serves as a finishing touch and gives it a special taste.

INGREDIENTS

  • 150g mustard
  • 80 ml apple cider vinegar
  • 20 ml Worcestershire sauce
  • 150 ml honey
  • 5 tbsp brown sugar

PREPARATION

  1. Mix all the ingredients in a small pot and simmer slowly for five to ten minutes.
  2. Don’t finish the grilled food, such as chicken breasts, legs or chicken wings, with the glaze until the end.
TIP

The glaze also works wonderfully as a dip, so you can grill your chicken as usual and pour the glaze over it on the plate. We also ate them with vegetable skewers and grilled asparagus. It also tastes wonderful as a dip.
