Oven-cooked radicchio

INGREDIENTS

  • 3 small radicchio ‘Rossa di Treviso’
  • 1 courgette
  • 2 eggs
  • 250 g mixed grated cheese (Emmental, Mozarella, mountain cheese)
  • ½ tsp garlic powder
  • ½ tsp thyme
  • ½ tsp Mediterranean – universal spice
  • Salt, pepper
  • Sunflower oil
  • Olive oil
  • chopped walnuts

PREPARATION

  1. Wash the courgettes and cut them into small pieces. Place in a baking dish drizzled with sunflower oil.
  2. Grate the cheese, mix in the eggs and spices and place on top of the courgettes.
  3. Cut the radicchio into quarters and place on top of the mixture. Drizzle with olive oil.
  4. Preheat the oven to 180°C.
  5. Bake the radicchio for about 20 minutes.
  6. Sprinkle with chopped walnuts before serving.
