Peach Jam with Thyme

But let’s get to the main ingredient: peaches. There’s nothing better than the taste of freshly picked peaches from your own garden. We process our peaches in various ways, but this jam is simply our absolute highlight. The combination of juicy peaches and the distinctive aroma of thyme makes this recipe a real treat.

Our delicious peaches are not only incredibly sweet and tasty but also rich in vitamins and antioxidants. They contain vitamins A, C, and E, as well as valuable minerals like potassium and magnesium. Their natural sweetness and intense aroma make them the perfect ingredient for jams and preserves.

I have two different preparation methods for you: one classic on the stove, and one for those who have a Thermomix.

INGREDIENTS

  • 1 kg peaches
  • 500 g gelling sugar (2:1 ratio)
  • 1 vanilla pod
  • 1 sprig of thyme
  • 1 lemon

PREPARATION

  1. Pit and cut the peaches into pieces.
  2. Strip the thyme leaves from the stems. Discard the stems.
  3. Squeeze the lemon.
  4. In a large pot, combine the lemon juice, thyme, peach pieces, and the vanilla pod’s seeds. Puree with an immersion blender.
  5. Add the gelling sugar and boil for five minutes.
  6. Pour the jam into sterilized jars. Turn the jars upside down for 5 minutes.

 

Thermomix Method:

  1. Pit and cut the peaches into pieces.
  2. Strip the thyme leaves from the stems. Discard the stems.
  3. Squeeze the lemon.
  4. In the Thermomix, combine the lemon juice, thyme, peach pieces, and the vanilla pod’s seeds. Blend for 15 seconds on speed 10.
  5. Add the gelling sugar and mix all ingredients on speed 3 for 5 seconds.
  6. Cook the jam on speed 2 at 100 degrees Celsius.
  7. Pour the jam into sterilized jars. Turn the jars upside down for 5 minutes.
