Peanut butter biscuits with chocolate

INGREDIENTS

  • 125 g peanut butter
  • 125 g butter
  • 200 g brown sugar
  • 2 medium eggs should be at room temperature
  • 1/4 teaspoon salt
  • 250 g gluten-free flour (Schär, mix for cakes and biscuits)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 100 to 150 g chopped chocolate

Toppings:

  • 50 g peanuts roasted and preferably unsalted
  • 80 g chopped chocolate

 

PREPARATION

  1. For the dough, cream the softened peanut butter and butter with the sugar, add the salt.
  2. Stir in the eggs one by one until well blended.
  3. Add all the other dry ingredients to the bowl and mix well.
  4. Put the dough in the fridge for about 20 minutes.
  5. Preheat the oven to 180 degrees Celsius. Line a baking tray with baking paper.
  6. Form balls of the dough with your hands, place them on the baking tray with enough space between them (the cookies tend to melt) and flatten them slightly. Sprinkle the peanuts and chocolate drops on the unbaked biscuits and press them a little into the dough.
  7. Bake the cookies for about 10 to 13 minutes.
  8. They will spread quite a bit and be quite soft when you take them out, so it’s better to leave them on the tray first or they will crumble when you touch them.
TIP

You want the biscuits nice and soft and chewy, then bake these for only 10 minutes!
