Pear Chocolate Cake

Pears have been my absolute favourite fruit since childhood. In a cake they provide juiciness and a flavour kick! The recipe is very simple and even for gluten-free gourmets, I’ve included the perfect formula to make this succulent cake possible for everyone. Because even in the world of gluten-free delights, there’s always room for sweet indulgences!

But before we dive into the delicious details of the recipe, let’s take a look at what you need to know about pears. Pears are not only delicious, but also extremely healthy. They are an excellent source of fibre, vitamin C and K, as well as antioxidants. Pears are also known for their digestive benefits and can help stabilise blood sugar levels. This makes them a fantastic ingredient for our gluten-free cake, which is not only delicious but also nutritious. 😉

I’m sharing with you the irresistible recipe for a gluten-free pear chocolate cake. This cake combines the delicious juiciness of fresh pears with the tantalising sweetness of chocolate chips to create a true taste sensation.

INGREDIENTS

  • 2 pears
  • 100 g chopped chocolate
  • 4 eggs
  • 1 pinch of salt
  • 170 g sugar
  • 1 pkg vanilla sugar
  • 125 ml water
  • 125 ml oil
  • 250 g flour
  • 1 pkg baking powder
  • Oil to grease the tin

Ingredients for the gluten-free alternative:

Replace the 250 g flour with:

  • 150 g rice flour
  • 75 g corn starch or potato starch
  • 10 g locust bean gum
  • 10 g psyllium husks

PREPARATION

  1. For this simple oil cake, separate the eggs and beat the egg whites with a pinch of salt and a hand mixer until stiff.
  2. Then beat the egg yolks, sugar, vanilla sugar, water and oil in another bowl until foamy, mix the flour with baking powder or, for the gluten-free alternative, mix all the flours together well and stir into the yolk mixture.
  3. Peel and core the pears and cut into small pieces.
  4. Fold the chopped chocolate and pear pieces into the mixture.
  5. Now just fold the beaten egg whites into the mixture and mix to a creamy batter.
  6. Then bake the dough in a buttered ring cake tin or ring cake tin at 180°C (top/bottom heat) in the preheated oven for approx. 25-30 minutes.
  7. If desired, you can decorate the cake with chocolate icing and dried rose petals. The cake can also simply be sprinkled with icing sugar
