INGREDIENTS

  • 1 sheet of puff pastry
  • Crème fraîche (or vegan crème fraîche)
  • 1 egg yolk
  • Organic trout caviar
  • Black truffle pearls (e.g., by Sommelier Suwi Zlatic)

PREPARATION

  1. Preparation:
    Roll out the puff pastry and cut it in half. Spread one half with crème fraîche, then place the second half on top and gently press down.
  2. Cut into squares:
    Use a knife to cut the pastry into small squares and arrange them on a baking tray lined with parchment paper.
  3. Create indentations:
    Use a round glass or bottle to press small indentations into each square. Prick the indented areas several times with a fork to help them keep their shape while baking.
  4. Bake:
    Brush the pastry squares with egg yolk and bake in a preheated oven at 180°C (350°F) for approximately 20 minutes until golden brown.
  5. Fill:
    Allow the pastry squares to cool, then carefully cut them in half. Spread the bottom halves with a little more crème fraîche and add small portions of caviar and truffle pearls. Place the tops back on.
  6. Serve:
    Arrange the bites elegantly on a serving plate and serve immediately.
TIP

Using vegan crème fraîche makes these bites suitable for vegetarians. The black truffle pearls add an aromatic depth that pairs beautifully with the caviar. Plus, the vibrant orange of the trout caviar and the dark elegance of the truffle pearls create stunning visual contrasts that will wow your guests!
