Quick Broccoli and Mushroom Stir-Fry

INGREDIENTS

  • 1 small broccoli, cut into florets
  • 250 g (9 oz) mushrooms, sliced
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tsp soy sauce (optional for extra umami)
  • ½ tsp thyme
  • ½ tsp sweet paprika powder
  • Salt & pepper to taste
  • 1 handful fresh parsley for garnish
  • Optional: grated Parmesan or toasted nuts as a topping

PREPARATION

  1. Prepare the vegetables: Wash the broccoli and cut it into small florets. Clean and slice the mushrooms.
  2. Sauté the aromatics: Heat the olive oil in a pan over medium heat. Add the onions and garlic and sauté until translucent.
  3. Cook the vegetables: Add the broccoli and mushrooms to the pan. Season with soy sauce (if using), thyme, and paprika powder. Stir occasionally and cook for about 5–7 minutes, until the broccoli is tender-crisp and the mushrooms are
  4. slightly browned – Season & serve: Season with salt and pepper, sprinkle with fresh parsley, and optionally top with Parmesan or toasted nuts.
