Quick Cauliflower Soup

What to do with the cauliflower stalk?
A delicious cauliflower soup. Served with a sheep cheese ball with a pepper mix @stayspicedcom. Zero waste, homecooking, glutenfree.

INGREDIENTS

  • 2 stalks of cauliflower
  • 1 small onion
  • 2 tbsp butter
  • 500 ml vegetable broth
  • Cream
  • Salt
  • Pepper

PREPARATION

  1. Peel the onion and dice finely.
  2. Dice the cauliflower stalks.
  3. Heat the butter and roast the onion in it.
  4. Add the cauliflower stalks and roast.
  5. Pour in the vegetable soup, cook for 10 minutes.
  6. Then puree and pass the soup through a fine sieve.
  7. Pour in some cream and season with salt and pepper.
  8. Serve with a sheep cheese ball with a pepper mix of Stayspiced. (www.stayspiced.com)
