Quick pasta with summer vegetables

Welcome to our delicious recipe for vegetable pasta with zucchini, spring onions, peppers and mushrooms! This Italian pasta with vegetables is not only quick to prepare, but also incredibly versatile. Perfect for a quick weeknight dinner, our quick vegetable pasta provides a healthy and tasty meal the whole family will love.

Whether you want to enjoy pasta with vegetables and feta, pasta with vegetables and cream or pasta with colorful vegetables, this recipe can be adapted as you wish. INGREDIENTS

  • 1 small zucchini
  • 1 pepper
  • 1 green onion
  • 100 g mushrooms
  • 1/2 clove of garlic
  • 1 tbsp oil
  • fresh thyme
  • Salt and pepper
  • 250 g pasta noodles

PREPARATION

  1. Cook the pasta in salted water until al dente (please do not overcook).
  2. Cut the spring onion into small pieces and sauté briefly in olive oil.
  3. Cut the peppers and zucchini into strips, add them to the onion and fry briefly.
  4. Slice the mushrooms and add them to the vegetables and fry the vegetables for another five minutes.
  5. Add the spices If necessary, add a splash of water or vegetable stock to prevent burning.
  6. Add the drained pasta and mix. Let fry for another 1-2 minutes, season to taste.
