Roasted nut mix

There’s nothing like the tempting smell of roasted nuts. They are crunchy, sweet, salty and spicy all at once – a real feast for the senses. Each bite offers an explosion of flavour and texture: the delicate sweetness of the caramelised sugar, the salty nuance that enhances the flavour of the nuts, and the spicy seasoning that adds an exciting complexity.

With their distinctive brain shape and nutty flavour, walnuts have always been a prized delicacy. They are rich in healthy omega-3 fatty acids, vitamins and minerals and are considered a source of energy and well-being. Their rich flavour and crunchy texture make them the perfect base for this nut mix.

INGREDIENTS

  • 400 g mixed nuts, e.g. cashews, almonds, hazelnuts, walnuts (unroasted and unsalted)
  • 2 tbsp rapeseed oil (or another neutral-tasting oil)
  • 2 tbsp agave syrup or maple syrup
  • 1 tsp coarse-grained salt
  • ½ tsp curry powder
  • ½ tsp Ras el-Hanout
  • 1 tsp paprika powder
  • ½ tsp cayenne pepper
  • ½ tsp chilli powder

PREPARATION

  1. Place the nuts in a large bowl and mix thoroughly with the oil, agave syrup and spices.
  2. Place the nut mix on a baking tray lined with baking paper and spread out well so that the nuts are not on top of each other.
  3. Place in the oven at 220°C top and bottom heat without preheating. After about 6 minutes, turn the nuts over once.
  4. After a total of 10-11 minutes (depending on the oven, a little longer or shorter), remove the baking tray from the oven and let the nuts cool down well. Be careful as the nuts are very hot. Leave to cool directly on the tray.
  5. Then put the cooled nuts in a nice jar and seal it. They will keep for a few weeks and are the perfect snack between meals or a great addition to desserts or a cheese platter.
