Salsa – fruity, spicy

This salsa is perfect for a snack with tortilla chips, as a topping for tacos, as a side dish with grilled meat or fish, or for a cool sharing table. More and more in vogue is “The new Sharing”, different dishes are set together at the table and everyone can grab wherever they want.

Why is tomato salsa so popular on our table? Not only does it taste incredibly refreshing, but tomatoes score high in nutritional values. Here are some interesting figures about tomatoes:

  • Tomatoes are a good source of vitamin C and vitamin K.
  • An average tomato contains about only 22 calories, 1 gram of protein and 5 grams of carbohydrates.
  • Tomatoes are also rich in antioxidants like lycopene, which can help reduce the risk of heart disease and certain cancers.
  • There are many varieties of tomatoes, including Roma, Cherry, Beefsteak, and Heirloom tomatoes. The type of tomatoes you use in your tomato salsa recipe will depend on your taste and, of course, availability.

To make a delicious tomato salsa, it is best to use fresh and ripe tomatoes. With the other ingredients such as onions, garlic, lime juice and coriander, we not only add more flavour to the salsa, but also some nutritional value.

INGREDIENTS

  • 600 g tomatoes
  • 2-3 cloves of garlic
  • 1 onion or 1 spring onion
  • 2 chillies or chilli seasoning
  • 50 ml olive oil
  • 50 ml apple vinegar
  • 1 tbsp smoked paprika or paprika powder
  • 1 tbsp cumin (cumin seeds)
  • 1 lime (juice)
  • Salt, pepper

 

Optional ingredients according to taste:

1 tsp. cayenne pepper, provides even more spiciness if the chillies are not yet enough for you

1 bunch of fresh coriander, not everyone likes it, but it gives the salsa a very special flavour.

PREPARATION

  1. Wash and chop the tomatoes.
  2. Peel the garlic and onions and chop them into small cubes.
  3. Cut the chillies into fine rings.
  4. Mix all the ingredients together.
  5. Garnish with finely chopped spring onion.
TIP

Preparing the salsa in advance

We all know the problem: as soon as the tomato season arrives, we are inundated with tomatoes. Salsa is a great way to preserve tomatoes or keep them in stock. Here you have to change a few steps.

  1. Wash and chop the tomatoes.
  2. Peel the garlic and onions and chop them into small cubes.
  3. Cut the chilli peppers into fine rings.
  4. Heat some oil in a pot. Fry some of the diced tomatoes until they are slightly toasted.
  5. Add a little sugar to make the browning even better, but if you prefer a sugar-free diet, it is not necessary.
  6. Add the remaining oil and vegetables and sauté until translucent. Add the vinegar and spices.
  7. Simmer for about five minutes with the lid on until the diced tomatoes have broken down. If necessary, use a hand blender. Season well with salt and pepper.
  8. Stir in optional cayenne pepper and chopped coriander leaves. Fill the sauce into sterilised jars while still hot and seal immediately.
