Seductive grape-chocolate jam from the Thermomix

Can you use the grapes with the seeds?

Yes, that works in principle. However, I would suggest that the grapes are first chopped in the Thermomix on level 10 for around 5-10 minutes. This way, the grape seeds are barely noticeable. The seeds of red grapes are noticeably harder than those of white grapes. So you could shorten the time for white grapes.

INGREDIENTS

  • 1000 grams of grapes
  • 500 grams of gelling sugar 2:1
  • 2 teaspoons of citric acid
  • 200 g milk chocolate, I use Valrhona Feves Milk Chocolate Jivara 40%

PREPARATION

  1. Pick and wash the grapes and halve if necessary and remove the seeds.
  2. Put the grapes in the Thermomix. Puree for 4 minutes on level 10.
  3. Then add the gelling sugar and lemon juice and mix for 5 seconds on level 5.
  4. Now reduce everything for 10 minutes at 100 degrees on level 1.
  5. Chop the chocolate into small pieces and add to the jam. Mix for 5 seconds on level 5 and then reduce for another 2 minutes on level 1 at 100 degrees.
  6. Pour into hot, rinsed jars, close and turn upside down for 10 minutes.
