INGREDIENTS

  • 20 g chia seeds, ground (ATTENTION: this is not chia seed flour!)
  • 50 g almond flour
  • 19 g psyllium husk meal (ATTENTION: these are not ground psyllium seeds!)
  • 1/2 teaspoon salt
  • 150 ml of boiling water
  • Sesame to roll over

PREPARATION

  1. Mix all ingredients together except for the water.
  2. Add the boiling water and quickly stir the mixture with a spoon. Tip: Quickly shape the dough into the form or length that your grissini should have afterwards. The dough is very tough and is very difficult to shape from a small ball into long grissinis. If you are already forming a longer roll, you can also cut thin strips with a knife and then shape them into grissinis.
  3. Let the mass rest for 30 minutes. Be sure to cover with cling film so that the dough does not dry out.
  4. Heat the oven to 185 ° C top and bottom heat.
  5. Quickly knead the mass once briefly.
  6. Wet your work surface with water to make the dough easier to work with.
  7. Divide the dough and roll breadsticks. Then roll them in sesame seeds.
  8. Place them on a baking sheet lined with baking paper and bake the grissini for 45 minutes.
  9. Reduce the temperature to 70 degrees and bake the grissini for another 10 to 15 minutes.
  10. Allow to cool before consumption.
