Sicilian style romanesco with capers and lemon

INGREDIENTS

  • 1 piece romanesco
  • 4 tablespoons capers
  • 60 ml vegetable stock
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 2 cloves of garlic
  • sea salt, pepper
  • grated Parmesan cheese

PREPARATION

  1. Cook the romanesco florets over steam for 5 minutes.
  2. Then mix the romanesco with the capers.
  3. In a small bowl, mix the stock, oil, lemon juice and chopped garlic. Season with salt and pepper.
  4. Sprinkle the Romanesco with the marinade and Parmesan. Serve lukewarm or chilled.
