Why are chanterelles healthy?

Chanterelles, also known as chanterelles, are true nutritional wonders. They contain about 6.5 milligrams of iron per 100 grams, which supports blood formation and oxygen transport in the body. In addition, they are rich in beta-carotene, the so-called “eye vitamin”, which promotes eye health and ensures clear vision.

Are chanterelles difficult to digest?

Although chanterelles go well with game dishes and are rich in iron and vitamin D, it should be noted that they can be difficult to digest. It is therefore advisable to enjoy smaller quantities and consume them more often during the season rather than eating a large portion at once.

Can you eat chanterelles raw?

Chanterelles should never be eaten raw. These mushrooms cannot be cultivated artificially and must therefore be collected from the forest. Raw, they can be harmful to health, so thorough preparation is essential.

Why shouldn’t you warm up chanterelles?

Be careful when reheating mushroom dishes. Chanterelles should be heated well to at least 70 degrees Celsius. If there are any leftovers, they should not be reheated as the sensitive mushroom protein can be converted into toxic degradation products, which could lead to nausea and vomiting diarrhea.

How often can you eat chanterelles?

Chanterelles are low in calories and contain important nutrients such as protein, iron and potassium. However, consumption should be limited to around 200 grams per week as wild mushrooms can contain heavy metals such as lead and cadmium.

When should you stop eating chanterelles?

Slimy or moist chanterelles as well as those with black spots or white traces of mold are no longer suitable for consumption. Spoiled mushrooms can cause symptoms such as nausea, vomiting, diarrhea and fever, which is why it is important to sort them out in a timely manner.

INGREDIENTS

For both variants:

  • 4 slices of bread or toast
  • 2 tbsp Philadelphia vegan or Philadelphia (for the non-vegan version)
  • 2 tbsp Creme Vega or Crème Fraîche (for the non-vegan version)
  • 1 clove of garlic
  • 1 onion
  • 200 g chanterelles, fresh
  • Olive oil
  • Salt, pepper
  • Chili
  • 1 bunch of parsley, fresh
  • 1 tsp forest mushroom – mushrooms & spices from Stay Spiced!, if available

 

Additional ingredients for the bacon and cheese version:

  • 25 g bacon (smoked, streaky)
  • Freshly grated Parmesan

PREPARATION

Variant with bacon and cheese:

  1. Toast and prepare:
    – Toast the bread or toast.
    – Rub the toasted slice lightly with a clove of garlic.
    – Mix Philadelphia and Crème Fraîche and spread on the bread.
  2. Fry onion and bacon:
    – Cut bacon and onion into small cubes.
    – Leave the bacon cubes in a pan until they are crispy.
    – Add the onion cubes and sauté until translucent.
  3. Prepare chanterelles:
    – Chop the parsley finely and sauté briefly with the onions and bacon.
    – Add the chanterelles and fry, reserving any liquid that may form.
    – Season with salt, pepper, chili and mushroom seasoning.
  4. Top and garnish toast:
    – Pour the chanterelle mixture onto the bread.
    – Sprinkle freshly grated Parmesan on top.
    – Sprinkle with fresh herbs and enjoy immediately.

 

Vegan variant:

  1. Toast and prepare:
    – Toast the bread or toast.
    – Rub the toasted slice lightly with a clove of garlic.
    – Mix Philadelphia vegan and Creme Vega and spread on the bread.
  2. Fry Onion:
    – Cut the onion into small cubes and sauté in olive oil until translucent.
  3. Prepare chanterelles:
    – Chop the parsley finely and sauté briefly with the onions.
    – Add the chanterelles and fry, reserving any liquid that may form.
    – Season with salt, pepper, chili and mushroom seasoning.
  4. Top and garnish toast:
    – Pour the chanterelle mixture onto the bread.
    – Sprinkle with fresh herbs and enjoy immediately.
TIP

Both toast variants can be refined with additional herbs or spices as desired. The combination of crusty bread, creamy spread and hearty chanterelles makes this snack a real treat for any occasion!
