What do you call breadcrumbs in butter?

In contrast to sweet butter crumbs, there is also a mixture of breadcrumbs and butter for savory versions. The simpler version is common, which consists only of breadcrumbs browned in butter (Beurre polonaise). The polonaise is to be distinguished from the classic garnish à la polonaise (Polish style) for poultry and Polish sauces.

Are breadcrumbs and breadcrumbs the same thing?

The difference between breadcrumbs and breadcrumbs lies in the degree of grinding of the bread: breadcrumbs are much finer and more evenly ground than breadcrumbs. Breadcrumbs are coarser and therefore have more crunch.

INGREDIENTS

  • 250 g white bread from the day before (alternatively gluten-free white bread or brioche)
  • 75 g butter (or vegan butter for a plant-based version)
  • 4 tablespoons sugar (alternatively cane sugar for more flavor)

PREPARATION

  1. Prepare the bread: Remove the crusts from the stale white bread and tear into small pieces.
  2. Make the breadcrumbs: Process the bread pieces in a food processor to make fine crumbs.
  3. Melt the butter: Melt the butter in a non-stick pan over a low heat and allow to foam briefly.
  4. Toast the breadcrumbs: Add the white breadcrumbs to the pan, mix well with the butter and toast for a few minutes, stirring constantly. Make sure that the crumbs do not burn.
  5. Add the sugar: Just before the crumbs are golden brown, sprinkle over the sugar and continue stirring until the crumbs have reached the desired color and crispiness.
TIP
  • Zero-waste tip: You can also create wonderfully sweet crumbs with brioche. Reduce the sugar by 1 tablespoon as brioche is naturally sweeter.
  • Gluten-free option: Use gluten-free white bread and plant-based butter for a gluten-free and vegan option.
  • Aroma kick: For a special aroma, use cane sugar instead of granulated sugar and refine the crumbs with a pinch of cinnamon.
  • Fresh bread? Simply cut into slices, dry in the oven at 100 °C, let cool and chop in a blender.
