INGREDIENTS

  • 4 cooked dumplings from the previous day (bread dumplings or potato dumplings)
  • 3 eggs
  • 1 small onion
  • 1 tbsp butter or neutral oil
  • Salt & pepper to taste
  • 1 tbsp fresh parsley, chopped (optional)
  • A pinch of nutmeg (optional)

PREPARATION

  1. Prepare the dumplings: Cut the dumplings into slices or small cubes.
  2. Sauté the onions: Finely chop the onion and sauté in a pan with butter or oil until translucent.
  3. Fry the dumplings: Add the dumpling slices and fry over medium heat until golden brown.
  4. Add the eggs: Beat the eggs, season with salt, pepper, and nutmeg, and pour over the dumplings. Let them set slightly, then mix well.
  5. Serve: Sprinkle with fresh parsley and enjoy immediately.
