Beetroot pasta with feta cheese

Beetroot, also known as beetroot or beetroot, are not only colourful but also incredibly nutritious. They are rich in fibre, vitamins and minerals and offer many health benefits. Here is a delicious recipe that highlights the benefits of beetroot in a delicious way.

This beetroot dish is not only delicious but also an excellent source of fibre, vitamin C, folic acid, iron and potassium. INGREDIENTS

  • 1 kg cooked beetroot
  • 250 g pasta Linguine al Bronzo
  • 100 g mild feta cheese
  • 1 clove of garlic
  • 1 sprig thyme
  • salt, pepper
  • 4 tbsp olive oil

 

Topping:

  • Sheep’s cheese
  • Ruccola salad marinated with olive oil and seasoned with sauces
  • Pine nuts, roasted
  • Olive oil

 

PREPARATION

  1. Put the cooked beetroot, feta cheese, thyme, garlic, salt and olive oil into the Thermomix. Puree for 30 seconds on the highest setting.
  2. Cook the pasta according to the packet instructions and strain. Set aside a little of the pasta water.
  3. Put the pasta back into the pot.
  4. Pour the beetroot mixture over the pasta and mix well. As the mixture is cold, turn the hob on slightly so that the mixture mixes well with the pasta and warms up.
  5. If the mixture is not liquid enough, you can dilute it with a little pasta water.
  6. Arrange the pasta on a plate.
  7. Garnish with the marinated rocket, the feta cheese, the pine nuts. Drizzle with a little olive oil.
TIP

I like to use the Thermomix for mixing and then also for stirring in. This makes it incredibly quick and easy to prepare farces. If you don’t have a Thermomix, simply use a hand blender.
