But what does polenta actually mean?

Originally from northern Italy, polenta is a porridge made from corn semolina that is cooked with water or broth. In regions like Austria it is also known as “Plente” or “Sterz”. Polenta has many benefits: it is low in calories, high in fiber and therefore good for digestion. So is polenta good for the intestines? Absolutely! With its healthy ingredients and only around 140 calories per 100 grams, polenta is not only light, but also beneficial for the stomach.

But why do polenta slices sometimes fall apart?

The key is the consistency of the semolina. Polenta needs to be cooked thoroughly and cooled completely before cutting so that it stays firm and doesn’t crumble. A common problem when cooking is sticking to the bottom of the pot – how do you prevent polenta from sticking? By stirring regularly, it stays creamy and doesn’t stick.

Another advantage of polenta: It can be grilled wonderfully and goes perfectly with hearty toppings such as grilled vegetables or sautéed mushrooms.

How do you know when polenta is done?

The grains should be soft and the consistency creamy. For added flavor, butter and Parmesan can be stirred into the polenta before grilling.

What is the difference between polenta and corn semolina?

While corn grits are the raw product, polenta is strictly speaking the prepared dish. However, both are versatile and form the basis for this delicious recipe.

Grilled polenta is not only a simple but also a versatile side dish that enhances any meal thanks to its crispy texture and smoky grilled flavor. Whether as a starter or as a side dish – these polenta slices will be a highlight on your grill buffet!

INGREDIENTS

  • 1 cup polenta (coarse corn semolina)
  • 4 cups of water
  • 1 teaspoon of salt
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter (or homemade herb butter)
  • 1 tablespoon olive oil
  • Fresh herbs (optional for garnish)

PREPARATION

  1. Cook polenta: Bring 4 cups water to a boil in a medium saucepan and add the salt. Slowly stir in the polenta and reduce the heat to low. Simmer, stirring frequently, until the polenta is thick and creamy, 20 to 25 minutes.
  2. Refine: Remove the polenta from the heat and stir in the grated Parmesan cheese and butter (or herb butter) until they are completely melted.
  3. Let it set: Pour the polenta into a greased baking dish and smooth it out. Let cool until firm, at least 1 hour, or refrigerate overnight.
  4. Cutting: Once the polenta has set, cut it into even slices or squares.
  5. Grilling: Preheat your grill. Brush the polenta slices on both sides with olive oil. Place them on the grill and cook until golden brown and crispy, about 4 to 5 minutes per side.
  6. Serve: Remove the grilled polenta slices from the grill and garnish them with fresh herbs such as basil, thyme or rosemary if desired.

TIP
  • For extra flavor, you can stir chopped herbs directly into the polenta before it sets.
  • Grilled polenta tastes great with marinara sauce or sautéed mushrooms as a topping.
  • If you don’t want to use butter, try homemade herb butter or vegan alternatives instead.
