With just a few ingredients such as crème fraîche, cream cheese and the unmistakable aroma of wild garlic, this dip will be the highlight of your kitchen.

For vegans, the recipe is just as easy to make with plant-based crème fraîche and cream cheese. And if you have already preserved wild garlic in oil, you can use that too and even save on buying fresh.

Wild garlic contains more vitamin C than an orange and can therefore have an antibacterial, anti-inflammatory and immune-boosting effect. Folk medicine attributes positive effects to the plant on digestion, the respiratory tract, liver, gall bladder, intestines and stomach – it can relieve flatulence, cramp-like stomach pains and weakness.
In fact, everything from wild garlic is edible: leaves, stems, even the buds and flowers. The taste and aroma of the leaves are particularly intense before the flowering period – but the leaves are still edible even when they are in bloom.
Wild garlic is reminiscent of garlic bulbs in both aroma and taste, as it also contains essential oils and sulphur-containing allicin. It can be used to season and refine many dishes. Try it out, because now you know: Eating wild garlic raw is no problem.

Optional: wild garlic already preserved in oil
1. Prepare the wild garlic: Wash the fresh wild garlic thoroughly, pat dry and chop roughly.
2. Mix: Blend the wild garlic together with the crème fraîche, cream cheese and oil in a blender or with a hand blender until smooth.
3. Season to taste: Season to taste with lemon juice, salt and pepper. For an extra fine consistency, puree the mixture again briefly.
4. Serve: Pour the spread into a bowl and enjoy straight away or cover and leave to infuse in the fridge for about 1-2 hours to allow the flavors to fully develop.
If you have already preserved wild garlic in oil, you can use about 2-3 tbsp of it and reduce the fresh wild garlic leaves accordingly. This gives the dip an even more intense flavor and also extends its shelf life.
