Wild garlic capers

In this recipe I show you how to pickle wild garlic buds in vinegar. This will keep them for several months and you can use them as a garnish or ingredient in various dishes. INGREDIENTS

Makes 4 jars of 125 ml each:

  • 120 g wild garlic buds
  • 250 ml herb vinegar
  • 40 g sugar
  • 1 tsp salt
  • Black peppercorns

PREPARATION

  1. Wash the wild garlic buds, pat them dry and distribute them evenly over the glasses.
  2. Boil the herb vinegar with sugar, salt and peppercorns for a few minutes and then divide evenly between the jars. Close the jars immediately.
  3. Leave the jars in a cool place for about 2-3 weeks, then the wild garlic capers are ready to eat.
TIP

Wild garlic capers go well on a starter plate, on a sandwich, as an addition to a herb curd or in other variations as a decorative eye-catcher.
