What is a relish?

A relish is a sweet and sour seasoning sauce or a puree made from marinated vegetables or fruit, usually chunky with an intense taste. It is used cold and is particularly popular in English cuisine. Relishes originally come from Indian cuisine and were incorporated into English cuisine during the colonial era.

Difference between chutney and relish

Chutneys, such as quince chutney, are usually jam-like and slightly sweet, while relishes are thinner and contain fine pieces of vegetables or fruit. Relishes often taste slightly sour and can have a certain spiciness.

INGREDIENTS

  • 500 g zucchini
  • 1 piece of ginger (size to taste)
  • 2-3 tbsp apple cider vinegar
  • 200 g preserving sugar 2:1

PREPARATION

  1. Preparation of ingredients: Wash the zucchini, remove the ends and cut into thin slices or grate coarsely. Peel and finely grate the ginger.
  2. Cooking the Relish: Put all the ingredients in a large pot, bring to the boil while stirring and let it simmer for about three minutes.
  3. Filling: Immediately pour the hot relish into the sterile screw-top jars provided and close.
TIP

Just like jam, the finished relish lasts at least until the next zucchini season. Once opened, it should be stored in the refrigerator and consumed within 2-3 weeks.
