Wild garlic soup

Wild garlic is a wonderful ingredient that is both delicious and healthy. It belongs to the allium family and grows mainly in damp forests and along riverbanks. Wild garlic has an intense garlic flavour and is often referred to as a wild vegetable. It contains many important nutrients such as vitamin C, iron, potassium, magnesium and flavonoids. To prepare this soup, you need wild garlic, onions, potatoes, vegetable stock and cream. First, sauté the onions in olive oil and then add the potatoes. Then add the vegetable stock and bring the soup to the boil. Once the potatoes are soft, the wild garlic is added and everything is pureed. Finally, the cream is added and the soup is heated again.

And if I don’t have any potatoes at home, I use 1 teaspoon of locust bean gum to bind the potatoes, mix it with a little cold water and stir it into the soup. Instead of whipped cream, I use crème fraîche, which makes the soup creamier.

INGREDIENTS

  • 1 potato
  • 400 g wild garlic
  • 1 tbsp olive oil
  • 2 onions
  • 1 clove of garlic
  • 1.5 l vegetable stock
  • 60 ml whipping cream
  • salt
  • Pepper
  • nutmeg

PREPARATION

  1. For the wild garlic soup, cut the potato into cubes, finely chop the onion and garlic and sauté in oil.
  2. Add the vegetable stock and simmer for 10 minutes.
  3. Roughly chop the wild garlic and add to the boiling soup, cook for 2-3 minutes.
  4. Puree with a hand blender or Thermomix.
  5. Add the whipped cream.
  6. I like to add a spoonful of sour cream or cream cheese to the soup, these flavours go wonderfully with the spicy wild garlic.

 

TIP

Would you like to know how long wild garlic can be kept? Fresh wild garlic can only be kept for 1 to 2 days in the vegetable compartment of the fridge.

However, there are other ways to store the medicinal plant all year round: First of all, it is possible to freeze wild garlic. To do this, the leaves are washed, dried and chopped. They are then placed in a freezer bag or similar container for freezing. Another possibility is to process wild garlic with olive oil.
